Amazing Curry

Hello!

I just want to share this very easy dish that has become my staple.  I love it so much, and its so easy and cheap!

This curry is SO delicious and easy you have to try it.  It is under $10 per person, the more people eating the cheaper it will be.  And this meal that be made vegan or Keto! 

If you wanted to make it fun for kids do the vegetables in their own pots to let them be the chefs!  While this would be more clean up, allowing kids to be the creators and have ownership over their meals is a fun way to promote healthy eating.  When I have kids cook with me I will usually make a rule that they have to pick 5 vegetables  If your child is extremely resistant do 3.  Do rice cauliflower so they have no choice but to eat more vegetables.  Or mix the rice cauliflower with the regular rice.

Ingredients
Whole fat coconut milk
from the can,  I'd say if 4 or more are eating then 1 can per two people.  Otherwise 1 can for 3 people should be just fine.
Thai Kitchen Curry Paste I use about half the jar per can of coconut milk.
Fresh ginger or ginger paste
Coconut oil

All the vegetables you want
Chicken or Seafood  if desired
1 Egg if you want to increase the protein
Rice or Rice noodles If you want.  Rice will be cheaper than rice noodles.  Keep it Keto and do riced cauliflower.
Season to taste

First cook the vegetables.  If I use garlic and onion I always do those first.  I cook everything in coconut oil at first.  Then if I am doing meat that day I'll add those before the quick cooking vegetables, like spinach, peas,  riced cauliflower, and herbs...

After I have done the larger vegetables I will start the rice.  Rice is cooked with double the amount of water to rice.  I cook rice by first adding the coconut oil, garlic and onion if using, then I cook all of that together with the rice, then a minute or two later I will add 2 cups of water for 1 cup of rice, using the same cup I scooped the rice with.  then bring it to a boil, stir, then down to a light simmer with the lid on until there is no more water.  The timing should work out perfectly but its ok if the rice finishes early.  IF you have a rice cooker, then use that!  Riced cauliflower is much different, follow the directions on the packaging, or just saute it, it'll be ready in a couple minutes.

After the vegetables are in ( I only put the herbs in at the last second, like green onion and cilantro) I add the coconut milk, keep stirring, then add the curry paste.  Put about half the jar of Thai Kitchen curry paste for one can of coconut milk, add a little ginger, if using the ginger paste, just a little bit, about a dot size of your pinky... unless you love ginger.  Add a drop of fish sauce or soy sauce if you want.  Personally I don't.

Add the garnishes at the last second.  To make it incredible have fresh chopped cilantro and lime for each person to add right before eating.

While this meal is not exactly authentic curry, its delicious and quick.  Try it out and let me know what you think, or tell me what you did differently that made it better!

A Vulnerable Share

Hello!

As a coach I do a lot more work on myself than most people.  I have been committed to my evolution and seeking new information, ideas, and points of view to expand myself  for about 7 years.  I LOVE the insights and expansion I get daily, and sometimes it is not in a pleasant way, but I LOVE the expansion. 

 "If you want a better life you have to put better information in."  This was something that my mentors with Life Leadership used to say, it was  mantra that changed my commitment to reading and listening to these personal growth audios, and I saw the results in my life.

Now I listen to or read new content everyday, as well as meditate and write.  It is worth it!  Work with a coach and your results will compound.  You will see deeper and faster results.  I am speaking from experience of working with my own coach.  

Tony Robbins, among many others have been pivotal for me.  I am listening to this video right now, and I just got such a giant "ohhhhh!", with a feeling or relief, compassion, guilt and deep gratitude.  And my breakthrough was so profound that I want to be vulnerable and share this with you, I wish for you to get an equally deep shift towards expansion.

Now I can see how deep my desire to control  events, and even challenging people in my life.  I can see my internal struggle with wanting to be laid back or "go with the flow" and wanting so bad to manifest my desires kind of in a forceful way.  "I can make the law of attraction work for me" lol.  I just have to laugh at myself now.  And I am sorry to those that are very close to me that have had to experience my frustration that it "wasn't" happening fast enough.  I have repeated Tony's quote very often, because I do truly believe it "life is happening for you, not to you"  but now I get it on such a deeper level.  I can feel my heart smiling; that I feel like I am on the verge of tears.

I urge you listen to this video alone or with someone you love and see what insights or shifts you get from this video.  Go a step farther and be vulnerable, share you insight with someone.

Celebrating Success!

Hello!

I am so excited I need to celebrate!  I have been working with a client this summer and we have seen some breakthroughs!  Apart from the tiny yet huge breakthroughs in deeper personal awareness and understanding, this client has begun to see the shifts in her life reflected back to her.

Before coaching with me she told me that she only had about $500 in her checking account, and was quite stress about money.  Although she is incredibly creative and capable, I could sense that there was some doubt in her (super) abilities.  After about two months of money coaching she began to see some shifts, within a two weeks span, she had 5 clients call her, with no advertising or reaching out.  This is huge!  She was not planning on this, and did not put any effort into getting new clients.

Then about two weeks later she received a large amount of money, money that she had been expecting, but was loosing hope of when it would come.  This was wonderful news!  Instantly she enjoyed much relief, and could now see how her previous beliefs we blocking the abundance.  I enjoyed seeing her authoritative side establishing her boundaries and what she deserved.

It is so wonderful to see a cherished client flourish, confronting beliefs is sometimes hard work, but the pay off is so sweet.  In this particular case she got the money she had been asking for, with a much larger amount on the way, plus many other pattern and belief shifts making for an easier life.

Great job!  I love working with you, and as you continue to do the inner work more magic will continue to show up for you.

Upgrade your beauty and save money

​Hi Beauties!

I wanted to share one of my secrets that I have been doing for years.  I get complimented on my hair almost every day.  Keep it coming!  I LOVE every single compliment, even though I've heard it before.  I take really good care of my hair.  This has evolved to several other areas of beauty and skin care.  If I can save you money AND get your skin & hair to be even more glowing, giving away the secret is worth it!

So... What is the secret?  I put olive oil in my hair before I wash it, every time.  That's it.  Sorry, not that climactic.  Olive oil is so good for us in general, but putting it on your hair gets those nutrients exactly where you want them!  I don't know the science behind it, but I can tell you my hair is really healthy.  Its the same thickness from the root to the end, and sometimes my hair strand is 2 feet long.  My hair stylist says, what ever you're doing keep it up!

What are the other benefits of taking care of your hair in this way?  Well literally its cheaper than the hair masks you buy in stores.  One $16 (Costco) bottle of olive oil has lasted me about a year.  Most hair masks are about $5-$8, and at most have about 4 uses.  So you would have to buy that same product once a week if you used it the same amount. 

Here's the math:  $5 x 52 weeks = $260

Compared to Olive oil, I buy the Spanish Olive oil from Trader Joe's because I don't have a Costco card any more.  So lets round up and say I use one bottle of $8 TJ's olive oil and I go through it once a month which would be using A LOT.

$8 x 12 months = $96

So even just based on math alone, literally olive oil is cheaper.  But there's also the massive benefit that you are drastically reducing the amount of toxins you are exposed to if you use olive oil, which eventually will help you out health wise later on in life, and probably contribute to lower medical bills.

The other thing I do is I use coconut oil as my lotion.  I don't use regular lotion, it has been years since I converted to coconut oil.  And my skin feels so much better.  The way that I use it is in the shower or bath.  Its so delicious in a bath, just drop a blob in, and let yourself soak in the nourishing moisture.  Or in the shower, when I'm done I rub it all over before drying off.  My skin feels great all day long and I don't need lotion.  The interesting thing about this is that the skin is our single largest organ.  Just like eating; what ever we put on our skin gets absorbed into our body.  Questioning my logic?  How about those progesterone creams that we can have prescribed to regulate our hormones?  How about the nicotine patch?  Or the birth control patch?  All of these are administering medication through the skin.
    Like I mentioned above (olive oil), you get the added benefit of removing toxins from entering your body, and replacing it with the nutrients of coconut oil.  If you want your coconut oil to smell  really good, add some essential oil.  My favorite for the bath is lavender or melaleuca (tea tree).

Just one warning, it does make your bathtub/shower floor quite slippery, so be careful.  I have almost slipped before.  (If you decide to try out these ideas I cannot be held responsible for any injuries or results of trying out what I do in my own life)

PLUS!  Coconut oil, when put on the skin becomes anti microbial, so if you have a cut or rash it helps to kill any bacteria.  I learned this from Barbra O'neil, an incredible Health Director of the Misty Mountain Health Retreat in Australia, and she has a retreat center in the US too, Living  Springs Retreat.  When I learned about this fun fact, my habits of how I was already treating my skin made sense.  I have eczema, and when I eat something I am not supposed to and begin to break out, I double up on the coconut oil, and put it on my skin every time I think about it (at least once an hour) and after a day my rash is cut in half at the very least, usually its gone when I am good about keeping my skin well hydrated in coconut oil. 

Although its not possible for me to measure the long term gain you would get from switching your beauty products to food, I can tell you that I see a difference in myself, and other people notice too.  Not to mention the up front immediate savings.  Try it for one month and see what you think.

I have done my best to get all of my products as low as I can get, now the highest rating of any product I have in my house is a 3, and I do see a difference.  My skin is better, one friend commented that I do actually look like I am getting younger (thank you!).  I never get headaches anymore, and my periods for the most part are better.  Although some of my products are quite a bit more expensive than what I used to use.  Ultimately that decision will come back to your values.  Do you value cheap and good enough for now?  Or more expensive, but an investment in your health and overall well being?
